Popularised during La Belle Epoque in the 1870's in Paris, Absinthe is an old school spirit made using the trinity of herbs, Wormwood, Fennel and Anise.  It's a wonderfully herbaceous and complex spirit with earthy, bitter and sweet characteristics.  Known as the "green fairy" it has a vibrant green hue which is a result of infusing the spirit with our farm grown grand wormwood (Artemisia  Absinthium).
 
Absinthe is generally served by slowly dissolving a sugar sugar cube placed on a slotted spoon under an absinthe fountain but can be easily enjoyed at home with some sugar syrup and ice cold water.
 
It's a critical ingredient in classic cocktails like the Corpse Reviver No.2 and the Sazerac.
