Australia's first Oyster Shell gin, this gin is built on generous foundations of juniper, and combines 13 carefully selected botanicals. These include cumquats and saltbush we grow here at the distillery, as well as waste oyster shells we collect from our local oyster farmers. The result is a gorgeous savoury gin, with an almost creamy mouthfeel, that absolutely shines in any kind of martini.
 
First released as the "Commissioning Gin" for HMAS Supply II in April 2020, it was re-released under our own label (with a few minor tweaks) in October 2021. Since May 2025, it has been made using locally grown Australian juniper.
